HAPPY THANKSGIVING






Greetings! It’s hard to believe Thanksgiving was only last week - it feels like a long time ago already! This week has felt hard: Logan got sick, which means I didn’t get good sleep, it’s been busy with both work and home stuff, and Ken is in the zone to study for his exam in a couple of weeks. Case in point: I have been trying to do this post since Tuesday night. But Thanksgiving was wonderful! We had people come to us this year - my sister, my brother-in-law, their daughter, my BIL’s mother from Romania, my cousin Lois and my cousin Joe- all joined us and Mignon for a great meal on Thursday. It was wonderful to have everyone buzzing about the house as we cooked, and dinner was such a peaceful, relaxing, delicious event.

We went with dispatch caulking the turkey, which is the way to go in my newfound opinion. The meet was juicy, Flavorful, The skin was crispy, and the bird only needed to be in the oven for 90 minutes. Ken still isn’t a fan of turkey, but he said it was the easiest preparation he’s done for a turkey.

Mignon and I cooked the rest of the food, which included: sour cream mashed potatoes, green beans with almonds, maple syrup roasted brussels sprouts with bacon, candied yams, homemade rolls, apple and sage sausage stuffing, mac and cheese, cranberry sauce, sweet potato pie, and this amazing peanut brittle and chocolate cake by Ms. Mignon. You guys, my mouth is watering as I would count this. The food was so good, and so were all the leftovers (I had five consecutive meals of leftovers!) 

During dinner, we went around the table and each shared something that we were grateful for this past year. I lit a candle for everyone’s gratitude that they named, and we finished the rest of the meal with a candlelit table. I am so thankful and happy about the meal I got to have with these people around my table.
