recently, i discovered that YOU DON'T HAVE TO EAT OATMEAL SWEET!
if savory oatmeal sounds strange to you at first, it's understandable. but know this, it works. it works well.
this is my favorite breakfast these days (and sometimes its dinner).
using some chicken stock helps boost up the flavor,
and something about the texture of the oatmeal, and the salt + cheese + egg combo on the top makes this hearty and delicious.
ingredients:
2 c. rolled oats
1 c. of water + 1/4 c. of chicken stock
salt & pepper
shredded parmesan cheese
olive oil fried egg
cut up scallions or green onions
directions:
1. cook oatmeal in water and chicken stock for 5-10 minutes, until oatmeal is cooked.
2. heat up some olive oil, fry up an egg.
3. place egg on a heapful of oatmeal, sprinkle salt, pepper, and parmesan cheese over egg and oatmeal, top it off with some scallions.
so easy, so good.
Mmm this recipe sounds so delish and filling - I'm going to have to try it ASAP!!

ReplyDeletehaha momma, that's what it is, in spirit! that looks like a beautiful dish. in general, oatmeal is a great binder for all sorts of savory dishes...like meatballs!
