THAT WEEKLY FRITTATA



You probably do some version of throwing fridge leftovers together at the end of the week for a coherent meal: here's mine!

We do this almost every week and I like Alton Brown's version the best. I use the technique outlined there but go wild with the variations. The basic gist is to saute whatever we have on hand at the end of the week (because at the beginning of the week we do meal prep for the week and roast up a ton of vegetables). I usually start with onions and leftover roasted vegetables have included carrots, green beans, potatoes, sweet potatoes, broccoli, asparagus, spinach, kale, etc. and then add in any leftover protein (ham or turkey meat, ground beef, bacon). The one above was for a weekend brunch but it was onions, carrots, green beans and ham. 

Then in a separate bowl, I mix about 7 eggs, a couple of splashes of milk, and dashes of salt and pepper, which is then poured all over whatever is in the pan. I leave it there for 4-5 minutes until the mixture sets, and then put it into the oven to broil for 3-4 minutes. Sometimes, if I have it on hand, I will sprinkle shredded cheese on top before popping it into the oven. Voila! It is so quick and it is usually what is happening over here on a Friday night with a big side of fruit.
