NUTELLA & CHEESE DANISH




Sometimes you see a recipe for a dessert that calls for Nutella and you strongly feel like you need it in your life. That happened when I saw this super duper easy recipe for Nutella & Cheese Danish, and its super duper easiness prompted me to try making it this morning as soon as I picked up a jar of nutella. I was not disappointed by how quick and delicious it turned out to be. Also, it is pretty, so it gets bonus points.


1. Preheat oven to 350. Mix 6 oz. of softened cream cheese with 2/3 cup of powdered sugar and 3 tablespoons of nutella.


2.Unroll one 8 oz can of croissant dough and arrange it into circle on grease cookie sheet.


3. Spread filling on top of one side of the dough.


 4. Take the longer pieces of the dough and fold in towards the middle. 


5. Cut off the end pieces and cover the remaining open areas. Press to seal edges. 


6. Bake in preheated oven for 15 minutes until golden brown. Drizzle with melted nutella and sprinkle with powdered sugar.


7. Voila! Enjoy.

DEAR BABY.....

I don't mean to be a big old sap, but it seems to be inevitable when you are doing things like having a baby with the person you're in love with. It's not that everything is coated in glitter and gold but life perspective shifts a little, and it’s trippy and awesome.  One of the ways I've been memorializing this trippy and awesome journey is by writing, and I wrote up this letter a while ago for our baby to read one day about her dad:


Dear baby,

I want to tell you about your dad. I’m sure that you love him a lot right now, but I also want you to have a glimpse of what he was like while you were growing into a baby because everything is so new and exciting for us right now. It may give you further insight into how much we love you if you know where you came from and what things were like while we were waiting for you.

I don’t know what kind of person your dad will be by the time you can read and understand a letter like this, but right now, he is the kind of person who is getting used to balancing between being headstrong and flexible, between being passionate and reasonable – and he is doing a pretty excellent job of it.  When your dad and I first met, the thing that I immediately loved about him was that he is a guy who knows what he likes, passionate about what he wants, and when he gets excited about something, he really gets excited about it. Because he was so sure of the things he liked and didn’t like, it came across to me in his personality as confidence and I liked that. I also fell in love with the way that he honestly dealt with people. He appreciates sincerity and enjoys hearing people’s stories, like I do.  The things that frustrated me about him was the flip side of the thing that I loved most about him - how stubborn he could be about the things he liked and the things he thought he was right about. But somehow over even the just the past few months, it has slowly been maturing into something that is down right admirable. We’ve known each other for 11 years, dated for three years, and have almost been married two years now and it has been pretty amazing to see how he is growing into a man. And by “a man”, I mean someone who takes responsibility, ownership, initiative, values wisdom, is patient while being firm, and also can discern his lady’s needs. These are really good qualities in a husband, and I have a feeling they will be great qualities in a father. You are lucky, sweet baby girl, that you have a dad who is going to be both passionate and reasonable, both strong and gentle. I think it’s the best kind of combination.

From the very beginning, your dad knew that he wanted you and he was very excited about having you be a part of us. You will grow up to be a woman so you may eventually know what it feels like to worry about having a career, having a family, and trying to figure out what being a woman means to your identity. I was and am going through these things, and I was worried about what having a baby meant. When I held the positive pregnancy test with tears of worry, your dad was filled with nervous/excited joy and hugged me tight enough until I was soothed and filled with joy too. I am almost 9 months pregnant now with you and along the way, his excitement and anticipation about you has been a constant. It is so unbelievably reassuring to have a partner is up for the ride. There was so much to learn and take in, and even though it was overwhelming at times, I have constatnly felt like your dad and I have been in on all of it together, as a team. In this regard, he has not only been a good husband, but a much needed friend. It has been fun having your dad be my husband and my best friend to experience all of these changes with. We love talking about you and talking about what you will be like and how much we will love you.

You know what your dad has gotten really good at doing these days? Apologizing. Well, no, not just apologizing, but owning up to things and communicating his care for me when we have conflict. This means a lot to me because at the beginning of our marriage, it used to drive me crazy that after we got in an argument or I was in a bad mood, he would go silent and sort of shut down. This did not bode well with me, because I am the type to want to get it all out, air everything out and then reconcile immediately. That’s pretty much how we did it in our family growing up. Our family's philosophy was that there would always be problems between people who loved each other, and working out the differences, even if it meant being emotional and angry, meant that we cared. So when your dad would back away, I would take that to mean that he didn’t care. I later learned that the reason he would disengage is because for him and from his family's philosophy, fighting meant you didn’t care, that disagreement meant you didn’t’ love each other enough, and that there was a problem.  In a strange way, he was saying he loved me too much to have a problem with me; while I was saying that I loved him too much to NOT have a problem with him. (Isn’t that funny how love can be communicated in such different ways?)

I eventually also learned that he is the type of person who needs some head space to breathe and think, and that me stomping around demanding more conversation was pretty much the opposite of effective. He learned that I can’t sleep at night if I feel distant from him and that words mean a lot to me. We learned things like this about each other, and the beautiful thing was that we felt our marriage was important enough and safe enough for us to adjust and grow towards each other’s needs. I tried to be okay with walking away from conflicts when it got too heated, and told myself that the world will not end if the sun goes down on our anger because he loves me anyways, no matter what. I started noticing that he would try to continue talking things out with me if he knew it was important to me, and that he would take the time to say I’m sorry if he knew I was feeling hurt and frustrated. I don’t know if he knows this yet, but when he comes back after our arguments have turned into nonsense talk where neither of us knows what the hell we are talking about, and holds me, or tells me in his calm voice that he is sorry (even though I know it is obviously both our faults), and tells me he loves me, I fall in love with him a little bit more each time. In my opinion, it is one of the most manliest things that a man can do-  to have care for his wife in that way - and your dad is getting really good at it.

Other things about your dad that I think will suit him well in a father role is that he is a good coach and teacher. He coached volleyball for the past few years and I loved watching him do something that he was so good at and loved so much, and I think you will reap the benefits of that. He hopes you will play volleyball, by the way, but whatever you end up doing, I’m sure that he will also be a really good fan. Also, your dad is really funny… at least I think so. He can always make me laugh. We both like laughing and finding the humor in things and I hope that our home is one where there is lots of laughter. He is also getting pretty good at prioritizing life and I'm starting to trust his judgment more and more as I see him navigate through tough decisions. I think he will be the type of dad that will prioritize his marriage and his family, and this makes me feel secure about doing such an awesome and scary thing as raising a family together. Most importantly though, we are both struggling/learning to prioritize our faith and relationship with God and it is encouraging to me when I see that he wants to make this a priority, too. 

I tell you all of this, baby, because I think it means that he will be a really good dad for you.  I am glad to know that I’ll be a witness of how he grows into that role and I’m praying that we will both grow into our roles as parents in a way that compliments each other and best fits you. I can’t wait to see you guys together, and I hope you get to appreciate him as much as I do, perhaps even more.

There were rumors that H&M Home was going to be available in the U.S. in Spring of 2012, but sadly, it hasn't happened yet. They also just launched their H&M Kids collection, which has a few really cute pieces and the prices are good, too! Now if only they would open up a H&M Home here in the U.S.! A GREY AFTERNOON IN A BOOKSTORE


Sometimes you plan a trip to the public library after work, but when you come home you find that the window blinds that you ordered for your house have arrived and your husband gets his power drill out and you get excited about blinds going up and before you know it, it's too late for the library. The good news is that we now have blinds in our bedroom and bathroom so we can take showers without the unsettling feeling that someone is probably watching. The sadder news is that my constant efforts to get to the library don't see much success. It may have something to do with the antsiness, but I'm in the mood for a good long book that will hold my mind captive for a time. I've been craving that feeling of being in the middle of a great book - that feeling where even though you break away for a moment, you belong to another world, and you feel feverish to get back to it. I read Steinbeck's East of Eden when I was in highschool and I remember it being that type of a story that moved and pulled the reader so much that you felt grateful to be privy to it, but other than that, the memory of why I liked it was faint, so I decided I should re-read it. Surprised to find that I didn't own a copy, I marched over to Chop Suey - a small bookstore with new and used books in Carytown - and found a used copy for $2.85. I also picked up Jonathan Franzen's Freedom, because it was thick, and it was about time I read Franzen.

I am so easily charmed by small bookstores, enough that I feel justified in wanting to stay there for hours and compelled to ask strangers about their favorite books. Also, I wanted to take photos of its nooks and crannies because it was raining and grey outside and I wanted to capture the feeling of being in a small and quirky bookstore on a rainy day...you know, for posterity. Bookstores with used books in particular - they steal my heart.  If my feet weren't feeling like they would blow up to the size of boats from the swelling, I would have meandered through, reading every single title. On their second floor, they also had a small room in the back that was empty of books but had small black and white photos hanging on its walls, photographed by Johnny Barton. Something about the stillness of the room, the gray outdoors and the simple stark prints, made the room feel like a chapel. The low, almost non-existent lighting, purposed or not, was perfect.  The photos were almost creepy, but deliciously so. It always gets my attention when black and white photos are done in this way - the photographer is relentless about what they want you to see, and you find yourself staring at the photo for longer than you want to. I would make another visit just to look at those photos again.

39 WEEKS




39 weeks, can you believe it?!!! I know women do this all the time, but I am still a little bit impressed with myself for getting this far. I also realize I said I wanted to keep my mind open to the possibility that baby may come a week or so late, but I would be oh-so-happy to have her come out on the due date. I am feeling too big to be carrying this belly around at work and in this heat, and she is getting ever so heavy and low. Don’t be surprised if you find me going on long walks and eating spicy food the day before she's due...

SUCCULENTS, OTHERWISE KNOWN AS FAT PLANTS

 Being in a house with so many windows makes me feel like it would be okay to invite some plants in to come live here. So I told K. that I would like some plants for my birthday and after a sort of tortured time in the greenhouse - how do you pick?! - we walked away with three succulents. An aloe, hen and chicks, and jade plant. I am ever so happy about these additions to the house.

That’s the sound of me coming up for air at the other side of the pool. The length of the pool being the work week, obviously, and yes it felt like I was holding my breath the entire time. Against what felt like impossible odds, I made it through, and I shall now think upon the freedom of the next two days. Everyone, appreciate yo weekend!

A SORT OF OUTDOORSY MID-WEEK DINNER


Being at work this week has been rough! mostly because it is going by extremely slow. Like a snail, on a turtle’s back, with no agenda. On Wednesday I felt sure that it had already been a full week, but it hadn’t. There was nothing particularly wrong or different about work this week, but it must have something to do with how antsy I’m getting, even more than I realize. My head is definitely someplace else, and it’s one of those things where you look at the clock and see 10:21 AM, only to look back at it 3 minutes later thinking tons of time has gone by and see that it’s only 10:24 AM. Yeah, brutal. What totally helps is the downtime between the work hours, and yesterday we enjoyed a slow and peaceful dinner outdoors because the air was so nice, and not horridly hot. We don’t have a deck yet so we’ve been doing our grilling out from our garage and Rusty usually hangs out with K. while he grills. Yesterday, I decided to join them and we didn’t feel ready to go back inside so we ate our food outside while gazing at the tall trees, spotting deer, and throwing Rusty pieces of shrimp.

LOCAL CUPCAKES



Something about having the growing baby makes me feel really enthusiastic about cupcakes. Prior to pregnancy, I liked cupcakes well enough but usually wouldn’t be able to eat a whole one. These days, I stare at a box of four and feel positive that I could devour them all in one sitting. I’m a big fan of Pearl’s Cupcakes here in Richmond, especially their Double Trouble (chocolate cake with chocolate buttercream frosting) and C is for Cupcake (vanilla-brown sugar cake with chocolate chip cookies baked throughout the batter, topped with cream cheese frosting and a mini homemade chocolate chip cookie). But also recently, we stopped by Frostings so that I could get my lemon cupcake fix and my oh my, that was a good fix. Their Lemon Bliss (Lemon cake, fresh lemon curd filling, lemon cream cheese frosting) is so dang good I know I’m going to end up going there again this week to go get another one!

Also, in cupcake-related form, have you heard about the Lemon Drop at Cappellino’s Crazy Cakes in Charlottesville, VA? Apparently, several (19) overdue pregnant ladies went into labor shortly after having their Lemon Drop cupcake. Myth, coincidence, or lore – who knows, but I’m not opposed to trying it later down the road if I get desperate.

38 WEEKS




Personal facts and observations about week 38
  1. It’s a small travesty when I drop something on the floor because it is impossible to pick it up without looking super awkward. Yeah I’ll say it- I’ve picked up my phone with my toes before when it’s fallen on the floor of the car.
  2. Your skin becomes more sensitive to raging sun. The other day I took a 20 minute walk, and even with SPF 55 on my face, I felt like I got a sunburn on my cheeks. Granted, the temperature last week and this past weekend was deadly hot.
  3. After all this time,
    I still have trouble remembering to take prenatal vitamins + two iron supplements, and now several evening primrose supplements, every day.
  4. There is so much pain in my pelvic area. She is getting lowww. My least favorite parts of the day is when I am getting out of bed in the middle of the night or in the morning and have to take that first step because of the shooting pain. Also, leg cramps in the middle of the night! My friend Martha recently recommended coconut water for this though, and it seems to be helping.
  5. The comments and questions about when I am due now come at me non-stop. I don’t mind it, but I DID mind it when this one man said, in response to me telling him I’m 3 weeks away from my due date, “Oh, I would have said you were due yesterday! HA-HA-HA”.  Har. Har.
  6. I still need to get a nursing tank.
  7. I am squished in between the two emotions of not wanting to be pregnant anymore, but still not feeling quite ready yet to have my life taken over by a baby. 
  8. I feel like a hippo walking around on its hind legs.
  9. I am finding that the keys to not looking as wretched as you feel is a shower, lots of lotion or body oil, bright lipstick, and good posture.
  10. Sometimes I fall asleep at night imagining what it will be like to hold her in my arms.

BOLERO



 The most recent Radiolab podcast tells two stories of an artist and a composer – stories which both revolve around the piece, “Bolero” by Maurice Ravel. I loved this episode even more because of how much I love this painting. It’s obsessive, colorful, and orderly, and I would put a giant print of this in our living room. The painting is by Anne Adams, who quit her job as a biologist to become a full-time artist when her son was in a bad car accident. At one point, she became obsessed with Ravel’s famous composition, “Bolero”, and decided to paint a visual representation of the piece. The podcast then goes to explain how both Adams and Ravel experienced a degenerative disease that may have made its first appearance in the piece, “Bolero”.  Check out the episode here.

DINNER WITH FRIENDS AND SWEET BABY GIRLS

 

 We had our first official dinner on our new dining table with a couple of our dear friends who came over to hang out and pray. K. grilled up some shrimp kebobs and brats, and we had some naan, tomato & cucumber salad, tzatziki sauce for a simple and greek-themed meal. For dessert: cooked peaches drizzled with honey and topped with toasted almonds and vanilla ice cream!

 Also, can I share some photos of how fun it is to have a sweet and funny little 9 month-old around the house?? SImone is constantly making me laugh and watching her boldly go after Rusty and squeal with delight was probably the highlight of my week. She makes me so glad we are having a little baby girl...!
